Delicious & Nutritious 2 Step Pancakes

If you're looking for a quick breakfast that is just as healthy as it is tasty, look no further. These quick and easy pancakes have a base of just bananas and egg, and can be customized based on the flavors you love! The texture is a bit different than traditional pancakes but they melt in your mouth so they are a great option for little ones!


2 Eggs

1 Banana

Canola Oil Spray to coat pan

Optional add ons, to taste: oatmeal, chocolate chips, blueberries, diced apples with cinnamon, etc.


1) Blend together eggs and banana OR mash ingredients well with a fork. (If desired, mix in optional add on ingredients AFTER blending/mashing.)

2) Add spoonfuls of pancake mix to a oiled pan on low/medium heat. Once one side has slightly browned, flip pancake over. Cook until both sides are cooked and golden in color.

Entire recipe has approximately 250 calories and 14 grams of protein.
