After months of eating the exact same thing for lunch every day, I stumbled across a few recipes for chickpea salad. As a vegetarian, I am always happy to discover a new easy meal that's full of protein. I wasn't sure how it would taste, but after lots of trial and error, I now have a new favorite lunch! It's great for vegetarians and meat eaters alike! And it can be adjusted for vegans by substituting mashed avocado or vegan mayo for the mayonnaise!
WHAT YOU NEED:
*1 can of chickpeas
*3 stalks of celery, chopped
*1/2 of a golden onion, chopped
*1 1/2 tablespoons of mayonnaise
*To taste/optional: lemon juice, sea salt, dill
1) Rinse the chickpeas with water and drain in a colander.
2) In a large bowl, mash the chickpeas with a fork.
3) Mix in the rest of the ingredients.
4) Enjoy as a sandwich on your favorite whole wheat bread or as a dip for chopped vegetables and crackers!
