Start your day the right way!
Many people think that skipping breakfast is the best way to lose weight and get fit. But that’s actually not the case! Sure, you’ll eat fewer calories in the morning, but by lunch time you’ll be so hungry that you’ll want to eat everything in sight!
The best way to meet your health goals is to keep your blood sugar stable. And to do that, it’s important to consume a balanced breakfast with protein, complex carbohydrates, and healthy fats!
One of my favorite ways to start the day on the right foot is by making this breakfast sandwich! Try it and let me know what you think!

BREAKFAST SANDWICH:
WHAT YOU NEED:
*Whole wheat english muffin (My favorite is Ezekiel which is made up of sprouted wheat, millet, barley and lentils!)
*Ripe avocado
*Cubed butternut squash
*Sea salt
*Lemon juice
*Nutritional Yeast (Gives it a cheesy flavor and is full of energizing B vitamins!)
*Optional: an egg
DIRECTIONS
Place butternut squash on a greased tray in the oven at 375* for 30-40 minutes or until tender.
Toast English muffin.
Separately, mash avocado and roasted butternut squash.
Place mashed avocado on bread. Then add mashed squash.
Top with lemon juice, nutritional yeast, and sea salt, to taste.
Optional: place a “fried,” egg on top.

TIPS Butternut squash can be roasted at the beginning of the week and stored in the refrigerator, making the prep time much shorter in the morning!
